Personally I wouldn't do a 1 hour 40 min connection on separate tickets connecting to an international flight. 1h40 is more than enough time to get from terminal 2 to International G and re-clear security - presuming that your inbound is on time. If your inbound is late, then you've got a problem - and at SFO in August there's a non-trivial chance your inbound will be delayed due to fog.

I'd go with the 10:54 arrival. It'll give you more time, plus you won't need to re-clear security as you can catch the air-side bus from terminal 1 to intl G.
