I think that the problem isn't with last minute bookings, it's with a broader route network and many more last minute changes. It's easy to say "no" if you change your flight within 72 hours of scheduled departure, any special meal goes away. It's a question of how customers feel about it.

It's something which might be forseeable for full paid F/C, with a clear understanding that inside T-72, it can't be booked or changed.
