Yes they do. Almost every united employee can see true booking numbers, they look at it all the time to list for flights. How much a flight can be oversold is a more closely guarded secret.
Same response i gave the OP basically. Inventory can change min to min. Talk to any non rev with any experience and they will tell you there were plenty of seats there when I went to bed, they were all gone waking up or getting to the airport. There are many many reasons airlines pull down the inventory close in.
