Close to SLO so you have a good assortment of restaurants.

+1 I am a big fan of SLO/Pismo Beach, which happen to be about halfway between Santa Barbara and Monterey. The little downtowns of each are decent places to stretch your legs and there are some quaint local flavors to be found (try Jocko's in Nipomo, about 15 minutes south of Pismo; one of my favorite restaurants in America).

There are no properties close to the luxury level here; there are some boutique places, like Pismo Lighthouse Suites. This might be one trip to forgo the luxury.
