They may cut you a break or give you store credit for a future visit. I find hotels can be more generous than their official cancellation policy.
Did the OP actually pay this? I thought that the trip was some company sponsored (I would assume) sales reward "meeting" or something similar. In fact, did the OP pay for the plane tickets or not? If the OP was supposed to pay and be reimbursed by the company, what is the company's policy in this case? The OP can't expect to be reimbursed for expenses that were already paid by the company or items that the company will reimburse.
ADDED. The post you quote says hotel was $749 per person, so I would assume not per night. A double room all inclusive for $1500 per night should be awfully nice in CUN, more so than my impression of the hotel that was named upthread, especially as part of a group package.
