I would mildly disagree that all European carriers do offer the same. BA did not go out of its way to install a C seat that is significantly worse than the previous coach seat. But LH and its disciples did.
And I am neither an economist nor am I into service ... so I not see the inherent difficulty here. That doesn't mean it isn't there but it also does not explain why LH offered all these goodies previously on dirt cheap fares but now these things are purportedly out of reach.
In my prejudice that doesn't compute well.
