Try to get some sleep on the red-eye, have some breakfast when you arrive then take advantage of the quiet roads ( although they're not that busy on the motorways around Shannon ) to reach your first location by late morning for an early check-in at your first hotel.
Obviously everyone is different but I find coming in to Europe from the States overnight the tiredness doesn't really hit me till lunchtime anyway.
Unless you were planning to stay around Limerick on the first night it does seem a shame to limit yourself to being close to Shannon when you're only in Ireland for a week.
