A friend of mine lives in Toronto so I wanted to go downtown for a couple of hours. Therefore I was not sure if I better ask to get my baggage labeled to YYZ only, take it to the check-in and get it checked to LAS.

If you have your bag checked all the way through you will NOT be able to go downtown.

You´d need to have your bag short-checked to YYZ, go through Canadan customs/immigration and then later check-in for your YYZ-LAS flight, go through US pre-clearance and security later that evening. You´d either have to take your baggage downtown or find a place to store it at YYZ, ut you can´t check it in as you have to go through US pre-clearance at the same time.
