My choices onward are 4:20 (AA), 5:10 (US), or 6:55 (AA). Those that know ORD and immigration/customs, etc., which would you do?

If ORD is your point of entry into the US, you will have to clear immigration (not is issue with GE), claim your bags and then go through customs at T5 .
As you exit customs, there are ticketing and check in counters at T5 for UA and AA. Probably for other airlines as well. So you should only have to take your carry-on bags with you on the ATS. Arriving at 2:00PM should provide for connecting to any flight you listed, unless there is some issue with late arrival, getting your bags, etc.
I believe that the carts are prohibited on the ATS.
