ATL-HNL on the A330 will have the seats you are looking for. Maybe angled but will go 180. Flying 10 hours plus this way sure beats flying in coach.

As for the HNL-LAX or the LAX-ATL routes on the 767, I am hopeful you receive what you are looking for. Aircraft swaps happen all of the time. More so on the LAX-ATL routes. People have posted questions about 752's, 753's, 763's, 763ER's, etc. I flew the 763 from RT ATL-LAX a while back. Had domestic FC with a pitch in FC of 37". Seats were good as was the recline and that was the problem. The person sat down and reclined into my lap, thus there goes my 37" of pitch. Shameful but better than coach for 4 to 5 hours. The DL seat map showed 30 FC seats. Didn't know what I was on until I boarded. I was on the 777 originally but DL changed the 777 to later flight time so that screwed us up.

On the outbound (ATL-HNL), take the A/B side of the aircraft. Best side for arrivals. About 45 minutes out you will start to see the islands. You may even fly directly over Diamond and Waikiki Beach. On the final approach, Pearl will be on that said as well. If you want to take pictures, use a real camera if possible. They will make you turn off all of you gadgets and you may misss some great. Even a disposable would work well enough.

On the HNL-LAX-ATL flights, the center seats would be fine. On the HNL-LAX flight, you will be over open water within 30 minutes of take off. On the LAX-ATL flight, you will be flying, I believe at night time. The biggest thing is that you and your companion would have access to the aisle without having to bother each other if you nap. Tough call on row.

If you have a domestic 763 like I flew on, I would recommend the first row (bulkhead). No one can recline into you. If you have the lie flat or recliner, there showed be plenty of room between the seats that only once on a while someone may use your seat to pull themselves up.

I know a Hawaiian vacation is a special trip. I love flying FC and arriving pretty refreshed. Flying 10 hours out of ATL on the A330 in FC will be an amazing way to start the vacation. Book the return the best that you can with the knowledge that you have regarding "codes". When you step on that plane on the return, expect domestic seating in FC. If you have a recliner seat or a lie flat seat, then REJOICE!
