In Japan, they are called Kappo type restaurants.
My favorite place, chef already knows my preferences, likes and dislikes, he just requests that I call him a day before so he can be sure that he has the supplies needed to make us a meal that is tailored for us.
We get there,we have no idea what he is making but 20 plus times we have done this, only once was the meal not to die for. There is a sense of anticipation each and every time we go.
