I have done that recently for a ressie made under my name and then found out that Mr. Nacho needs a visa to China and he had to have a valid hotel ressie. So I rang Marriott and got my ressie changed to his - we are both Gold so there is no issue with the status. They registered Mr. Nacho's name and MR # and the hotel had all those info.
I would have just made him a cancelable reservation at the same property, printed it for the visa, and then cancelled it on line. He's still going to stay at the same hotel, just with changed details on the rate and possibly room type. There's no rule saying that you can't even change hotels after applying for or receiving a Chinese visa. (Russia might have tougher rules on this.)
