It's the roosting effect. Similar to placing a blackout over a birdcage. Dimmer cabins, more passengers likely to be asleep and therefore less likely to be pushing the service button. An ex BA cabin staff friend of mine used to hate the JFK-LHR daylight "maniac', far too many awake, alert and thirsty pax! She much preferred the night flight option.
Yes, I've noticed this (though on AA, not BA). The daytime flight crews tend to be much more focussed on customer service than the overnight crews.
