What if you bought the ticket on an A340 and they changed it to a 777? I know it's a different situation as they can't give you what you want at their expense a la upgrading you to business class. But the principle is the same - they aren't delivering on what they promised so they are offering you a refund. They are still breaking French law by not delivering what they advertised at the time you bought the ticket but China Eastern changed the game, not Expedia. Not to say I wouldn't be majorly po'd as well, but I'd take the refund and be glad that I found out as soon as I did so I can rebook what I want.
