Doubt AMEX will accept an offer letter for income verification. Your offer letter is projected income, not current. A FR next year will still be a problem as 4506-T for this year won't show the income Amex expects based on how you completed app

Wouldn't put large spending on cards until after you start work. Besides, how will you pay if you won't receive your first check for at least 4 months?
