Interesting! I noticed the initial absence of salt and pepper too, on one of my last couple of flights, but then the FA delivered it separately. I was about to ask for it, since roast veggies definitely need seasoning.

Honestly, if it saves money because many of them don't get used, that's fine. The Scandinavian in me hates it when I ask for Splenda, get like four packets, use half of one, and they throw out all of them. (For the same price, you just get more Splenda?)

It's also better than over-salting all of the food, which would be the standard thing to do with pre-cooked catered meals.
