Hilton London Gatwick provides an excellent breakfast buffet: one of the best I have ever had. Do ask to be seated near a window. There is a raised area to the right of the restaurant which feels 'wrong' somehow and detracts from the pleasure of the meal.

No way should you miss a very good Hilton Breakfast for the Flounge offering.
