That's a few more months, so hopefully the new 787s will be a bit more reliable. I'd be more worried about 787 delivery, i.e. not getting the birds on time.
Norwegian have great customer service. If they don't have a 787 I'd imagine they will use 747s and transfer people to other flights.

Right now they have 737s, and are expecting the Dreamliner deliveries this year.

I don't believe that would apply as it's a European regulation, but there should be something that compels them to make reacomodation. It should apply on the trip back.
OTOH, if they don't have the planes, they would probably give you your money back, and you'd be stuck trying to find a flight at the last notice.
