You'd have to return for cash/check, but yeah, that works. I know of a few stores that will do it if requested, but I don't exploit it because it's basically stealing to do it intentionally.
Or on a different card. Some department stores (e.g., Nordstrom) will allow that. I've never done it. It's too unethical for me, though probably not illegal.
