To answer your question completely and directly:
1. The 757-200s (aka 752s) with flatbed seats do not currently fly to Hawaii.
2. United has a number of other aircraft with flatbed seats that do fly to Hawaii, including 767 and 777s.
3. All of these models (757, 767, 777) exist in both flatbed and non-flatbed configurations in United's fleet (unless the last domestic 767s have been retired, which I can't remember) so be very careful to distinguish which version you're looking at.
