As a parent that has taken a child on vacation since he was an infant, I think there is a lot of value in this very detailed review.
I have visited Provo a few times (did not stay at Beaches but did price it) and we have business acquistances on the island. I remember them mentioning Beaches had fairly major labor and management problems a couple of years back. The resort was shut down for a couple of days until things got worked out.
Provo is so expensive (food and drink) that I am surprised the AI concept is financially feasible on the island.
I have stayed at 3 different AIs over the past couple of years and I also found understaffed dining areas, running out of food (and no quick attempts to replenish the offerings) and weak drinks/small servers to be the norm. The business model seem to be offering "just enough" to satisfy the bare minimum food/drink requirement and not one speck more.
