Both 1 and 2 are practical, 3 and 4 you may try asking.

If you have flexible schedule, you may consider re-issuing the ticket for your new routing with the HKG-AMS leg booked on another date with availability and wait list for the date you wanted. CX usually opens its reward inventory closer to departure.
