It is definitely not 1-2-1. 1-2-1 layout does not exist on BA, and A321 is a single aisle aircraft.
It's a mistake for 1-2, 2-1. Or, she might have been referring to the port side as 1-2-1:
1 aisle 2
2 aisle 1
1 aisle 2
in which case it would make sense.
Anyway, it's only a short flight to ZRH, and the aircraft type probably won't stick anyway, so it's not worth worrying about.
