I'm wondering if you have a mid-haul A321 operating that flight on the particular day.

It's not 1-2-1 though - A320 family is single aisle. Most likely thing they were trying to say may have been that the aircraft had 1-2, 2-1, 1-2, 2-1 seat pattern in Club Europe (business class).
