1 hour sounds too fast for most types of food poisoning.

There is norovirus going around at the moment, so you may have had that.

Did any other passengers who ate the veal have any issues?

I'm not saying that it wasn't the food on the flight, but the airline food is one of the least likely sources of food poisoning given the preparation and storage, and it appears that many cases of suspected on-board food poisoning in fact do not originate on the flight.
