A few places on my bucket list I would suggest looking into:

Thailand: hit Bangkok for a few days as your stopover and then fly onward to Phuket for a few days on the beach. TG (obviously) has international service from both BKK and HKT, OZ also serves both airports via ICN.

Singapore: though you'll have to look for options other than SQ for the premium experience - check out NH, OZ, TG... also TK is an option if you don't mind going the long way!

Taiwan: with EVA Air joining *A early next year, there might be good availability in Premium Laurel (business class) which I've heard great things about. Not sure when you can start booking award travel on them with US miles, UA can already (though they've had a partner agreement with BR for decades).

China: Air China has availability but their service isn't consistent so I hear. Plenty of other options to PEK on AC, NH, and OZ. Once you're in China you can use LCC's or trains to get around... Only problem with the PRC is that you and your wife will need visas (not difficult to obtain but costs $160 per person).

Australia: Hopefully heading there myself next winter! Only two options that don't run afoul of the MPM rules are NZ (very difficult to find J space) and UA.
