You are not limited in which airline you fly SFO-SEA. You could fly VX or WN if you so desired. That being said, if you are checking bags it might pay to fly AS on a DL codeshare because they may check the bags all the way through if you show your second ticket. Just leave more than enough time because if SFO-SEA is delayed and you miss your award ticket Delta is under no requirement to accommodate you

There's no worries as to how you close off an open jaw. They assume that the point of the open jaw is that you're taking other transport to get back to your origin (or you took other transport to get there to start). I'm doing OMA-AKL//HKG-OMA on a DL award with AKL-HKG via SYD in QF F on the A380 using AA miles. (Well, the trans-Tasman flight is on a 737, but you get the point.) No issues whatsoever.
