Many thanks for the comments and your experiences! I think I'll arrange for our stay at the Hotel das Cataratas provided we can get a decent-size room/suite with a falls view based on the feedback below, and cross to the Argentinian side as a day trip.

That's good to hear because it wasn't clear to me from the hotel's website that you would indeed get falls views, which is the reason for going there in the first place.

We're definitely planning on doing both sides of the border, and probably crossing over into Ciudad del Este just to get the Paraguyan stamps in our passports. With three nights there should be enough time for this, but going to Ciudad del Este is down on the list of priorities.

This was my impression as well from googling and the hotel website.

I searched for this on MP but couldn't find it, but I did find an extensive trip report of the Sheraton.

Get the guided full moon walk if the timing is right, and the jungle tour.
I think 3 nights is all we can do on this trip and for that I'd prefer to stay in the same hotel as checking in and out would waste too much time and hassle. Unfortunately I didn't account for lunar phases in planning this trip, so it looks like a new moon for us...

The Paraguay visa seems to be the more challenging one...
