Once she gets into the departure area, she can easily pass 2-3 hours in duty free shops etc. She may also have lounge access at that point (not sure). She is an experienced traveller, just not familiar with DEL/India.

So again, I am wondering if I can offer any unusual out-of-the-box useful suggestion for the 6PM-Midnight slot.
