I remember a state made by a male FA nearly 20 years ago in an interview about air travel. He said that he preferred to work in a coach cabin as people in First and Business class had an inflated opinion of themselves and were excessively demanding.
An FA can not produce an extra blanket or a pillow anymore than you can, unless the aircraft has blankets and pillows, in addition to those placed on the seats. If the plane is not full, you can find one for yourself by asking people seated near unoccupied seats.
There are legitimate reason for using the call button. You are seated by the window and passengers seated next to you are asleep. All you need is a drink of water, you discover that your IFE system is not working or something else. It's better to use the call button than waking up people seated next to you. Why make those passengers get up even if they are not asleep? There are things that can be done without disturbing your fellow travellers.
True that an FA cannot magically create overhead space if it's not there. What if some passenger(s) have misused/abused or overused overhead space? Should the passenger start moving things around themselves? Maybe if the GA and FA had been doing their job properly, people won;t have to complain. That the airlines should not charge for checked bags is different issue.
Neither poking passengers nor clicking your fingers to get a response from someone is polite.
Stashing rubbish in seat pocket---I have to do that sometimes because I am not finished when they come around to collect garbage. Sometimes they walk by uttering "garbage" without making an eye contact with the passengers so fast that by the time you gather your stuff to hand it over to them, they are gone. The same happens when they come by offering tea of coffee. Perhaps a second round for collecting garbage would reduce that.
Asking for a different meal. It's ok to ask if another choice is available. Insisting that an FA "produce" their choice when there just isn't any left is unreasonable. I have had a few occasions when special meal request has gone awry. It's not the end of the world. Once we saw the special request for my son delivered to another child. We had not changed our seats. The funny thing is the other family accepted it.
Special brand of drink. Once again, I think, it's ok to ask if another brand is available. Anything beyond that is silly.
