If you like beer, I wouldn't think twice and go with BRU (IMO Belgium beer is the best in the world). Great food and beer with the Grand Palace to see a bit of history (there are some museums as well if you're into that).
Dutch craft beer is much improved in recent years (and is way under appreciated in the beer world). There are a number of really good beer places within easy walking distance of Amsterdam Centraal Station (In de Wildeman, 't Arendsnest, De Prael, etc.)
Not saying it is better (or worse) than any other country, but if you like Good Beer you can do worse than overnighting at AMS.
