I will suggest BOCHK instead. The main reason - HSBC and Hang Seng's line can be very long.

Make it simple. It sounds like you can find an address in Hong Kong without issue.
In this case, just apply for a credit card and then you will receive a reject letter.
And here you go - proof of address.
