Assuming you are "awake" when you get there, maybe you will consider using those handful of hours to sneak away from the airport for a meal. There are a couple late night food centers (think large open air food courts). Newton Circus is the classic and about 30 mins by cab from the airport. http://www.the-inncrowd.com/newtoncircus.htm

Otherwise, I think the food court in the basement level of the airport opens up pretty early in the morning. There is also a "YaKun" coffee place I know is open by the time UA checkin opens.
If you stay on "California" time, arriving in the middle of the night isn't an issue at all. It's actually something like 8:20am-3:05pm or so, and that worked out really nicely. And there are a number of food places open on the main airport floor (and got to admit it's kinda fun getting a high-octane (not decaf) mocha from Starbucks at 3:07am!

I looked at the link for the food court... looks like fun! I'll have to do Singapore again as a destination/MR and spend a day seeing things. Is there a "rent-a-Singaporean-FTer" service?
