We found the Polish very helpful in Edinburgh.
theoretically, of course, you should apply to your main destination country (or country of arrival) but it's unlikely to be a problem in practice.
The Polish consulate is a great idea. Although are you based in England or Scotland? I am in NE England so the 3-4 consulates I have looked into ask that the application is logged in person at their London office!!

Are you aware of any that I can post the documents into?

Also did you have to get the marriage certificate legalized by your wife's consulate before sending it in? The French and Italian consulate say that is necessary.

How long of a visa was your wife given? My other half's paid Schengen was for 1 year which just expired.
