If Udaipur can't be reached by a direct flight from Jaipur then Umaid Bhawan will be the easier choice.
Re Aman New Delhi. After a little more research I think we're going to stay there as the experiences they offer sound very good and being India first timers that's an important factor. Having said that our flight gets into Delhi at around midnight so we'd like to make it a total of 3 nights there and unless Aman will do a reduced rate for the first night we may change our minds.
Can anyone recommend a Virtuoso agent for us to go through?

A few more comments as I recently completed a similar trip:
New Delhi for a leisure visitor- consider the Taj Mahal Club Level- better location than the Palace or the Aman and easy to get to the train station from there.
Jaipur to Udaipur- get a car and driver arranged through your hotel. It is less than 5 hours door to door and much easier than a flight connecting through Delhi. In Jaipur I would also strongly recommend the Rambagh Palace (again, Taj).
Udaipur- I cannot say enough great things about the Lake Palace (Taj). I would not stay anywhere else.
