You have to call the airline to add infant as that can't be done online for most of the airlines. I suggested 3 economy as another option which means you are getting a full seat for the baby but you can also choose to just get 2 economy tickets and add the infant. It won't be as comfortable as other options.
They will make sure to assign seats where bassinets can be used, business or economy. It doesn't matter. Business is much better option, in my opinion, as your child can sleep next to you or the bassinet and you have much more room.

I did a quick search on a few different days and months as we will be flexible and some said available and some said waitlist i wonder what waitlist is?
I wondered say we did pick a date and for some reason it needed to be changed to a later or sooner date,would this be possible are these flights,tickets flexible to change if needed?

Ok i have got the bit about adding an infant regardless of what class i pick,in which i need to call them,i take there are at times family's traveling in business with such a young baby,its i have never travel in such style if i picked this option.also you say:

so in business class they can sleep with you or in the bassinet,is this safe?its not recommended to sleep with a newborn in bed at home incase of rolling on to them etc etc,i take its the same when they are still that age,but if ok then nice to know the baby can sleep with you or the bassinet,is the bassinet in business class next to you,as you can tell never flown this way and have no idea how it is.
Do you mean that having just two economy tickets that the baby is strapped to us for the trip,where does the bassinet come into it here,and when you say 3 economy tickets why a third the baby would only be 8/9 months old by that time so so young maybe to sit on a seat herself?
Also the saver thing it says something about 6months is this only valid for 6 months from booking?would hate to pick dates and then find that it expires before we leave.
I am not sure what to do now,business or economy but i think whatever we do it be singapore airlines as i have flown with them several times and i like them a lot,more than others and on what your saying quantas might not be flying by the time we go and possibly british airways and i also have been told and read that singapore are even better when traveling with infants,as you can tell its my first.
We probably be best going night flight as she sleeps right now at nights very well,shame there was not a stoppver on the trip on saver but hey its only a 5hr trip after singapore to perth after that
