It's a throwback to the 'good ol' days' when flying was a special event - A once-in-a-lifetime thing for many people. So if you had a special event (birthday) on top of a special event (plane flight) it was unique, and it got called out. The tradition carries over today, even though flying is as common as going to the drug store.
