They probably weren't handing out cash because you can easily add gratuity to the charge slip when signing.
I often use the St. Regis beach club and the facilities at the hotel and add at least a few dollars to the standard 10% service charge. The staff is excellent and IMHO deserves to receive a bit more for their efforts. I have also found that consistent tipping ensures preferential seating arrangements on the beach during peak season.
To each their own, I personally didn't think it was necessary based on what I was told, but I was also staying at the resort and paying the additional 10% service fee on top of my room rate. I liked the idea that the service fee was already included, and that I was told that tipping was not necessary because of this. So I never worried about it and had a fabulous trip.
