Neither Santa Cruz nor Monterrey did it for me. Santa Cruz possibly also backtracking a bit from Yosemite? Carmel certainly more "upscale", if a little twee (IMO). If you only have one night, I'd push on a little towards Big Sur, but make sure to arrive in daylight.
