The Holiday Inn is a good choice, it has a great location on the West Bank of the U of MN campus. When you check in, ask about a game shuttle. It would not surprise me there is one within a block. There are many great bars in what is called 7 corners where the HI is located.

Before the game, two of the best places to go on the East Bank are "Stub and Herbs" and Sally's. Both about 2 blocks from the stadium.
