In IOS 5.1.1, and I believe the previous releases, there is a message on the config screen which says "Messages created outside of Mail will be sent from the default account". So if you are creating messages from outside of Mail, then indeed you will see this behavior. However if you create from within the Mail app, then it sends to the correct SMTP server.
