VS PE is good but haven't flown AF so can't compare
Turkish Airlines Comfort Class is a much better product than Premium Voyager. The seats are like old business class seats with lots of space and they recline a lot as well. In addition, you get much better catering than in Economy of very high quality. If you go business from IST to Dubai you can also use their excellent lounge at IST airport. As the flight to Dubai is quite short, I would even consider doing PE to IST and Eco from IST to Dubai instead of PV with AF all the way.
