Looks like a UA flight on Saturdays leaves Chicago on a 777 and flies direct into Maui but I believe it is a domestic plane and we will be in economy seats no upgrading here but hoping to book early enough to get the best seats we can...
I know the day of travel there and back is going to stink regardless but trying to do what little I can by flying on a more comfortable airplane or least amount of connections etc...

You should do some price comparisons between the NYC airports, Boston, and Philadelphia for some cheaper flights.

Many of the hub aiports have direct Maui flights (United out of Ohell, Americam out of Dallas, etc).

The problem is what sort of price do you budget for because you could find a cheaper flight if you break up your trip by booking on different airlines where you fly to Seattle, San Francisco, LAX, Oakland, San Jose, or Portland. What you can do is fly to one city then fly to Hawaii, then return to another city then fly back.

Some of the west coast cities is cheaper because Hawaii is our caribbean on the west coast. So airlines will have direct flights serving more of the "local" market and not comon from a hub city so flights are cheaper. From the east coast flying out of Hub cities you are serving travelers from all east coast cities who are traveling to this hub for travel to Hawaii---thus it fills quicker and prices tend to be higher.

One issue...will you have enough electrical power on the plane for your kids entertainment.

An option youcan think of is for your travel doing Maui for 8 days then spend some time in the west coast cities such as LA or SF.
