E.g.: If you fly with an AF ticket on an OS flight (AF codeshare) it is possible to credit the miles to LH M&M and AF FB if you didn't enter a FF number at checkin and request the miles afterwards.

Yes it is possible, but you need an agent who knows the keystrokes required to assign specific segments to a FF account.

Star Alliance is very metal specific - in general you cannot credit non star alliance metal to a star programme.

AF coded flights despite whatever metal they are on will credit to AF/KL's own FB programme. Other programmes also do this, but it tends to only be in OW and ST programmes although note that a SU coded flight operated on OS metal won't for example credit to AF/KL's FB programme.

Looking at your flights above, I don't think the JJ operated but LA coded flight will credit to AY, and neither will the LA coded but JJ operated flight to M&M. You would really need to considering taking a look at JJ's and LA's programmes for that to work.

You might want to seriously consider your last option which was to avoid entering a number and retro claim.
