There is astonishingly little Japanese tourism information in general. The only guidebook I know relevant to your request was published in 1994(!), has not been updated, and is out of print.

Also, JR East runs a ski area that is directly accessible from Tokyo via shinkansen in 77 minutes. The train station is also the base lodge. This can work if you want to do some day skiing:
