As far as your "no one in their mind would check in valuables", one assumes that your bag is secured as it gets put in the hold. It had a lock on it and everything.
I've had checked bags through MEX a few times, and never had anything stolen. I'm also smart enough to not put expensive electronics in checked bags.

Over the last 25 years of flying, I've had more stuff stolen at US airports than anywhere else.
