The difficulty is if you get the Israeli stamp in your passport and you wanted to break your flight in DXB or if you suffer from missed connections or the like. I've heard that DXB immigration even check for the entry stamp to Jordan if you've crossed on one of the land crossings from Israel into Jordan such as Allenby - which is not uncommon for tour group people who may cross over to see Petra.
Forgive my total ignorance but are you saying that you would be refused entry into the UAE because of an Israeli or Jordanian stamp in your passport?
