Do we expect too much when flying Premium class?
In general, I think we expect too much... Service in all classes should be courteous and efficient. Call me a simpleton, but I don't understand the apocalyptic frustration when one is served champagne in 'the wrong glass' - just drink it and say thank you!
As far as I am concerned, the price differential is mostly about the actual seat. This is why I never fly J SH unless I need the TPs, and even Mid-Haul I only ever pay cash for Y+. LH is different, because I want to sleep if the flight is overnight...
Expecting the crew to be your slaves is wrong. Getting upset over the right cutlery and glassware just means (to me) that you have too little to worry about in life - perhaps you should find another hobby or something...
