Can you guys tell me if it is possible to change a date or flight once you have already booked your tickets? For example if a better flight opened up could we just move our current tickets to the new better ones?

Redemption bookings can be cancelled up to 24 hours before your first sector for a full refund. There's an admin fee (which is waived if you have a gold card). Best bet is to book the best options now and then consider cancelling / rebooking something else if other options open up for you. For maximum flexibility, consider booking the outbound and return as separate tickets.
