It doesn't look like the itinerary fits my needs (unless I'm looking at it wrong)

Leaves on June 8th
MCO-DUB arrives at 8:15am in Dublin on the 9th
DUB-BCN departs at 6:40am (too early) or 6:30pm (too late) on the 9th

Correct. I do not know if EI offers advance seat selection on UA award redemptions, but UA should be able to tell you. Seat selection probably won't be as critical on the TATL flight if you are able to get Business Class award seats.
